Home made spelt bread (with help from a bread machine). This one is 40% kamut, 40% spelt. and 20% rye, and i threw an egg into the mix, it tastes like a savoury cake, delicious.

It's a wholegrain ancient wheat, very tasty, as you know you need gluten to make bread, kamut has gluten in it, for me it's the best alternative to white bread flour. Even though it's wholemeal it has a light (yellowish) colour.

Thanks Pete - but I admit I've cheated a bit and googled already. And found it in my local Coop. Looking forward to try it together with a spelt/emmer flour. Didn't get any rye though, maybe I can use wholemeal wheat flour instead?

You can use any flour you like. I made one with some barley flour recently, even soya flour. You just got to make sure you have enough gluten in there, rye, barley, and spelt are very low in gluten and are best mixed with a gluten rich flour. White flour is the richest but i avoid it and seek more flavoursome alternatives.
