
Colour: Gold.
Nose: Dark fruits, vanilla fudge. Floral undertones with some gorse and cigar box. A tiny bit vegetal.
Mouth: Toffee, salty, sugars.
Finish: Peppery, hot, smoky, long with bitter chocolate.
Water brings out more vegetal notes, a little meat, and again adds to the pepper on the finish.
Comments: The Kilkerrans all have a sweet with cloves and some pepper signature. The different casks seem to be softening the harsher notes to different degrees but as we go through the bottles above from right to left I seem to be liking them more and more. Whether this means that Kilkerran will be suited more to sherry casks will remain to be seen in later years.
